I cannot believe we are nearing the end of our trip! Why is this happening? We spent most of yesterday exploring Arbois a.k.a. Pasteur town. Our assignment was to count the number of times Pasteur’s name or statue appeared in town, and I am pretty sure it was at least 30 times.
After taking a tour of Pasteur’s house and lab, we had a group dinner at Taverne La Finette. It was the longest (3 hours) and heaviest meal (4 course meal) of my life. I definitely had a cheese high from the cheese fondue that we ordered.
This morning, we visited the Comte dairy and saw the cheese-making process up close. We also tasted Comte (cow milk cheese) of three different ages. My personal favorite was the 6 month old Comte. We got to see how the milk is curdled and pressed into the molds. The smell in the room where they kept the cheeses to age was very overpowering.
All of us have been working hard on our cheese and wine projects (our final assignment is to research one cheese and one wine of our choice). We are presenting our projects tomorrow.
